Mastercraftsman Takeshi Saji has been manufacturing knives in Takefu city for nearly 50 years and is considered one of the best traditional smiths in Japan. He creates many custom-designed knives using many different materials and we are delighted to sell some of his production knives. These feature VG-10 cores with Riveted Black Micarta Handles. These knives are sure to look good and work well in the kitchen. As all his knives are handmade, wait times and the stock availability of these items is extremely limited.
As these are hand-forged knives there may be slight differences from the images. These knives also come with a basic edge but do need to be resharpened before first use.
The idea behind the shape of the blade is that it encourages a straight up-down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable. There is no need to push and pull the knife horizontally through the chopping motion. European cooking tends to use a lot more chopped vegetables than in Japan.
